We backup our databases nightly for just that very reason.  There are a number of ways to do this.  You can use a backup utility like Veritas.  Or you may use the standard backup features that come with SQL Server Management Studio.  It allows you to backup to a file on disk and restore the same way.  So when this happens, it is just a few minute problem.
